Egypt shares many dishes with its Mediterranean and Middle Eastern neighbours. The cuisine leans heavily towards earthy pulses, brightly coloured vegetables, gamey meats (mainly chicken and lamb), spicy stews, with the use of spices and simmering cooking methods infusing dishes with warmth.

Typical Egyptian mezzes consist of:

Fuul- a lemony broad/fava bean dip
Hummus- mashed chickpeas with lemon, garlic and tahini
Babaghanoush- a smoky eggplant puree
Falafel- ground broad beans and spices rolled into patties and deep fried
Aish, in particular the flat baladi bread
Stuffed vine leaves
Sabanikhiyat- spinach turnovers

Specialities:

Koshari- hearty dish of rice, pasta, pulses and lentils with a spicy tomato sauce and crispy onions
Molokiya- herby slimy green soup
Kofta- meatballs, usually made of lamb meat
Sayyaddia- a whole fresh fried fish such as sole, flounder, trout or bass, served with rice and lemon.
Mahallabiyaa- a delicate rosewater-flavoured ground rice dessert, topped with Toasted nuts and cinnamon

Drinks:

Chai- mint tea
Ahwa- Arabic coffee
Karkade- infusion made from roselle 洛神花
Asab- made from pressed sugar cane
